He scours world markets for peppers, cans them and adds to his massive stash in the fruit cellar. He NEVER shares his hot pepper canning recipes. Fortunately, I was able to get my hands on his fiddleheads recipe and here it is!<\/div>\n<div>\n<div><span>\u00a0<\/span><\/div>\n<div>\n<p><span><em>Note<\/em>: My dad&#8217;s recipe involves preserving fiddleheads in oil, but there are other ways to extend their shelf life \u2013 including <a href=\"https:\/\/5xuxq.r.ah.d.sendibm4.com\/mk\/cl\/f\/8dpeD6M87B2g1YEy8FQqibU_4zAEh8S5lef0erWAwTmEyhgrXETzfCAYfB3Xw4UgL3KRQkZqyApR2psyoJ62Nct6DWxyUrUbL0hD-b2rslb02j8GWlQHWzO7e2wAe5e9o9Ff8-m2OivXQ9cSD_sO2X2_8N0860y-LwumCVZruVqSrLKQlXsmvCod_Tz4QRYDLDf13T4jifzSZRXbRcx2zXLofAfPGB_iCwRmSmoV061OnCdxsrYeKWHNueaWv2R4OQO04w\" target=\"_blank\" rel=\"noopener noreferrer\" data-auth=\"NotApplicable\" data-linkindex=\"2\">freezing<\/a>\u00a0and\u00a0<a href=\"https:\/\/5xuxq.r.ah.d.sendibm4.com\/mk\/cl\/f\/Ec9B4KKOgrRL9wAMNPqbhMx25xyM5QRGKhIdQD89oO7Vfk3XFsG76SmEOD-_9GyBVacQJ_icyKcDwe_tm2lzqsqUAh9nP7Wv6BJCBETSasYDScRvWBty8E8xh_bPOHSkNDw3TAnuVij4a-CpCKJk3Ix3SfDDRJuQOftuS3H0tFQj00ub7WHfZ6_LUlyPyS15b4QUfoKszJU4nDS9krBBVDM3v0F5nTiZsycf7lJU1NG4eeMgX44Je2enkEwR-OY\" target=\"_blank\" rel=\"noopener noreferrer\" data-auth=\"NotApplicable\" data-linkindex=\"3\">pickling<\/a>.<\/span><\/p>\n<p>&nbsp;<\/p>\n<\/div>\n<div><span><\/span><\/div>\n<\/div>\n<\/div>\n<div>\n<div><\/div>\n<div>\n<div><span><strong>Ingredients:<\/strong><\/span><\/div>\n<div>\n<ul>\n<li><span>5 lbs fiddleheads<\/span><\/li>\n<li><span>1 lemon, thinly sliced<\/span><\/li>\n<li><span>Kosher salt<\/span><\/li>\n<li><span>White vinegar<\/span><\/li>\n<li><span>Vegetable oil<\/span><\/li>\n<li><span>Approximately 20, 250-ml mason jars<\/span>\u00a0<\/li>\n<\/ul>\n<div><span><strong>Directions:<\/strong><\/span><\/div>\n<ul>\n<li><span>Under cold water, wash the fiddleheads thoroughly to remove the ramenta (brown papery shell)<\/span><\/li>\n<li><span>Using a paring knife, trim the dark tips of the fiddleheads<\/span><\/li>\n<li><span>In a large pot, cover the fiddleheads in cold water<\/span><\/li>\n<li><span>Stir-in 2 teaspoons of kosher salt and lemon slices (the lemon helps prevent discolouration)<\/span><\/li>\n<li><span>Refrigerate for 2 hours, stirring a couple times<\/span><\/li>\n<li><span>Drain the pot and re-wash the fiddleheads in cold water<\/span><\/li>\n<li><span>Place a large pot on the stove and add a mix of 2\/3 water and 1\/3 vinegar (enough liquid so the fiddleheads are completely submerged)<\/span><\/li>\n<li><span>Bring to a boil and add two round tablespoons of kosher salt<\/span><\/li>\n<li><span>Add the fiddleheads and cook for 7 minutes<\/span><\/li>\n<li><span>Strain and quick rinse with warm water<\/span><\/li>\n<li><span>Thoroughly but carefully pat dry<\/span><\/li>\n<li><span>Using disinfected jars, fill with fiddleheads<\/span><\/li>\n<li><span>Fill jars with vegetable oil, up to the seem line<\/span><\/li>\n<li><span>Seal and turn upside down for one day to secure the seal<\/span><\/li>\n<\/ul>\n<p>Love this?
